Zucchini Cheese Casserole
3 lb. zucchini cut into 3/4 cubes
1 medium onion, diced
2 large cloves garlic, minced
1/2 tsp thyme
4 Tbs butter
6 Tbs flour
1 tsp salt or to taste
1/2 tsp pepper
1 can (7 oz) can diced green chilies
2 cups Jack cheese, grated
1 egg, beaten (optional)
3 cups cottage cheese
4 Tbs. parsley, minced (preferably fresh)
1/2 cup Parmesan cheese
Melt butter in pan and saute zucchini, onion, garlic and thyme.
Add flour, salt, pepper and chilies.
Mix well and pour into a 9×13 pan.
Mix Jack cheese, egg, cottage cheese and parsley and spoon over top.
Sprinkle with Parmesan cheese.
Bake at 400 degrees for 20 to 25 minutes.
