There are SO MANY books available on the subject! I would recommend you start with a cookbook. Try your library first, and see if you really like any of their books. One really good standard is the Moosewood Cookbook.
You might also look at this publisher’s website: http://www.bookpubco.com/ They have a lot of books about vegetarian living and cooking.

"Skinny B*tch" by Rory Freedman and Kim Barnouin
it’s pretty intense and quite hilarious but it’s very informative and a HUGE wakeup call.
by the way, they’re pushing veganism in this book, not lacto-ovo vegetarianism but i’d still recommend it to you. it’ll just make you more aware of what’s going into your body.
so that one is geared towards females then they have "Skinny B*stard" for males, which i haven’t read but i assure you it’s quite similar

Even though the book wasn’t about animal rights, Upton Sinclair’s The Jungle does a good job depicting how cruel and disgusting the Meat Industry is. I was already vegan when I read it, but I think if I wasn’t it would have been an eye opener. Peter Singer has written a few books advocating a plant based diet. Honestly, if you are looking to be "convinced" then you need to look within yourself and decide why you’re questioning your diet. If its due to animal rights or violence, ask yourself if you can do the handiwork of murdering the animal. If its due to health, then yes, read on. There’s plenty of stats to convince you about the benefits of a plant based diet, especially if you have a cholesterol problem. If its due to humanitarian issues read anything by Peter Singer and you will learn how a vegetarian diet can end world hunger. I’m going to stop writing now, because if I answer this question any further I’ll have a book to publish! Just do it- vegetarians rock!

Slaughterhouse
Granted all of these books promote veganism. They’re based not only on personal experiences and raw human emotion but also facts and objective truths about the world as we know it.
A book that I would recommend just for fun:
Free the Animals, this book is about the Animal Liberation Front (ALF). Such a great, interesting book.

Vegan with a Vengeance
Raw food for real people (not really a "cook" book)
