What are some good vegetarian cookbooks with healthy, gourmet recipes?

I’m looking for a cookbook that has some really good gourmet vegetarian recipes for appetizers, main dishes and sides. I really love Southwest/Mexican food like burritos and empanadas, but I also like Italian and Asian.

Can anyone recommend some really good cookbooks with great-tasting, healthy, gourmet, vegetarian recipes?

    The Cheese Factory Restaurant Cookbook – very good recipes some healthy some not.

    Rachael Ray’s Veggie cookbook (she calls for chicken broth though?)

    Vegetarian Pasta by Sarah Maxwell

    The New Vegetarian Epicure-by Anna Thomas

    Vegetarian Cooking for Dummies is a good starting point to. Helps you swap out items and understand nutrition.

    The Vegetarian Grill-Andrea Chesman

    The Winter Vegetarian-Darra Goldstein.

    It’s called "Veganomicon" by Isa Chandra Moskowitz
