Smart Ground is a versatile product created by LightLife and meant to imitate ground beef. It’s certified vegan (made from soy), kosher, and low fat. A 1/3 cup serving size runs 70 calories, providing 12 grams of protein. Smart Ground crumbles can be used as a meat substitute in a variety of recipes – use it to make meatballs, pat into hamburger patties, as a pizza topping, in shepherd’s pie, or tacos!
Vegetarian “Smart Ground” Tacos recipe (serves 2 – about 4 tacos)
12 ounce package of Smart Ground Original veggie crumbles
4 tortillas (try Tumaro’s Pesto & Roasted Garlic healthy flour tortillas)
1 cup chopped onion
1 cup chopped tomato
1 cup shredded cheddar cheese
1 cup shredded lettuce or green cabbage
2 tablespoons fresh cilantro
2 tablespoons olive oil
Taco seasoning to taste (or 1 packet) + 1 – 2 tablespoons of water
Hot sauce to taste (try Sriracha)
In a large skillet, heat olive oil for one minute on low heat before adding Smart Ground Original veggie crumbles. Break up frozen chunks with a fork to ensure even cooking. On medium-low heat, brown Smart Ground for 4 – 5 minutes. Add taco seasoning and water to Smart Ground and coat evenly. Add chopped onion and cook for 2 – 3 minutes, stirring constantly. Reduce heat to lowest setting to keep Smart Ground warm. Heat tortillas in the microwave. Spoon Smart Ground and onion mixture into tortillas. Top each taco with shredded lettuce or green cabbage, chopped tomato, cilantro, shredded cheese, and hot sauce. Enjoy delicious vegetarian tacos!
