    The recipies are detailed and easy to follow. There are a wide array of recipies with a variety of ingredients. Some cookbooks tend to use only a few ingedients over and over. I only wish the pictures were in color (of course that would drive the price up). But all in all, my book is getting many toggled edges and food stains. Delicious

    As a transitioning vegetarian,I bought this book, and a couple of others, to get me over the hump. I find this book is one I constantly turn to, for quick easy recipes. The ingredients aren’t that exotic, and are well explained. Often in vegan or vegetarian books, recipes tend to be oriental, which is good. I like oriental food. But I don’t want to base my life on rice, bok choy, waterchestnuts, and seitan. Heck, I’ve not even used seitan! Well, with this book, I don’t have to. Cinnamon rolls, with icing-the ingredients can be bought at the healthy food store, but nothing too weird. Smoothies and juices, Watermelon cooler…nothing exotic there. Southwest Roasted Asparagus and corn…Three layered nachos…the list goes on and on. Zucchini Roll-ups is one of my favorite recipes in the book. But I’ve not tried the cookie recipes yet. Vegan Cookies? Yep. Excellent ideas of things to do with boring tofu. I’ve tried several of these recipes,and they are really under 30 minutes, which is hard to believe. Plus, they pleased my meat eating family. The stuff in this book is good.

    I have a kindle, but chose to buy the book form. I’m glad I did, in the middle of the book, are bright, pretty colored pictures of some of the food, that would be missed if I had bought it on Kindle. To me, this book should not only be on every vegan’s bookshelf, but meat eaters as well. If meat eaters bought this book, then they’d have tons of ideas on how to cook vegetables for dinner.

    We love this book! Everything we have tried has been successful. The only caveat is that some of the recipes take 40-60 minutes unless you are team cooking. We usually trade days, so we’ve had to take note of which recipes are better to save for the weekend.

    The Tempeh-Vegetable Enchiladas were one longer-cooking dish that we loved so much we agreed to cook again. There was also enough extra filling to freeze for a second run.

    These days, as time is very tight and resources are limited, I have been turning to my copy of The 30 Minute Vegan for tasty solutions to the age-old question “What’s for dinner?” Most of the recipes are very easy to accomplish, although I do have to say that not all of them only take 30 minutes. However, the results have been consistently good. I especially like the dessert selections. The front of the book, not unlike many other cookbooks these days, is packed with very useful information for people who are just beginning the vegan way of life or for those who are just looking for healthy alternatives to a meat-eating diet. Most of the recipes are quite economical, but do be warned that there are those calling for some pretty pricey ingredients. On the other hand, the recipes are flexible enough for home cooks to be able to substitute ingredients quite easily. I heartily recommend this book for anyone wishing to improve their cooking skills and add healthy and tasty dishes to their dining patterns.
