I recently became a vegetarian and am having trouble with meals. Mainly just dinner. My family eats meat so on a regular night they have a meat dish, a pasta or rice side-dish (which i can eat) veggies and salad. I have been having trouble replacing the meat dish. Lately I have heated up something frozen like a morning star veggie cake etc. but that gets really monotonous. Does anyone have any good recipes that i can make quickly and that wont cause my family to feel that my new lifestyle is a burden?

Add veggies to the rice or pasta dish.
Stir fried veggies, Penne pasta tossed w/ chopped black olives, other veggies and slad dressing (italian), veggie chili (after saute veggies put your portion aside (and let them cook the meat w/ theirs, cheese or veggie lasagna, hummus on tortilla wrap (use differnt flavors for hummus..sundried tomato w/ a spinach wrap with sprouts, red onions, cucumbers.
Mac and cheese
buy some tofu or beans and just add it to the pasta or rice and if u want look up some recipes on google tats what i do :] but most of time i make up own dishes i make my own dinner so my mom doesnt have to hassle making mine and everyoneelses which is completly diffrent :]
I like meatless patties like boca burgers. I recently started eating those and they are so good. I also love vegetable inspired soup, and add a little tofu to make it more substainable. I’m new to this also and it can be interesting to create hummus inpired dips and pita bread for your guests and see how they gobble them up and don’t even know that they are eating vegetarian foods. I recently had a dinner party and I served cheese filled tortolini with red sauce. Toasted bread and a nice green salad and for dessert I made fruit parfaits and no one even knew that it was all vegetarian until we finished the dinner and I told them that I liked to eat cheese and dairy but had cut out meat from my diet for a while. Can you believe it. How wonderful it was and no one said a word…I love to use soy texture to make things for dinner. I used it in place of ground beef with hamburger helper and it was good. If you don’t really think about it, you can eat a great veggie diet…Like I used to love crab cakes. So I created the same recipe for the crab cakes but I used portabella mushrooms and chopped olives to replace the crab, and it was good…
theres tons of stuff, for something quick, you could make a soup or stew. just throw a couple cans of beans into a pot of vegetable broth and add what ever you have.. like olives, mushrooms, spinach, carrots, kale, rice, tomatoes, tomato sauce..
i make a bunch of this stuff and just put it in a tupperware thing and heat it up whenever i dont feel like cooking.
you can also make some pasta with lots of vegetables in it
tonight i made a sandwich that was really good, it had tomatoes, lettuce, and this yogart tahini sauce:
(its really good)
1/2 cup soy yogurt
2 tablespoons tahini
2 teaspoons lemon juice
1 clove garlic, pressed
1/4 teaspoon salt
1 pinch red pepper
4 teaspoons ketchup
2 tablespoons water
Mix all ingredients well in a small bowl. Add additional seasonings to taste.
you could also cook up a sweet potato and load it with yummy toppings
