According to RealAge, a new research suggests that steaming might improve the capabilities of some vegetable to lower the cholesterol. They tested the digestive effects of several vegetables (beets, okra, carrots, eggplant, green beans, asparagus, and cauliflower) both raw and steamed. Although it’s not clear why, steamed vegetables resulted in better binding to the bile acids. More bile acids gets excreted which makes your liver need more bad LDL cholesterol to make bile. Your body then has less LDL because of this.
As vegetarians, the most important still is to have adequate serving of vegetables everyday to meet daily nutrient needs.
