Roasted Garlic Gazpacho Shooter
1 head garlic
olive oil
1 cucumber
1/2 red onion
1 medium tomato
1 red pepper
1/2 green pepper
salt and pepper, to taste
vodka
chives
feta cheese (optional)
Cut a square of aluminum foil large enough to wrap garlic. Cut 1/4 inch off top of garlic cloves, leaving head intact. Place on foil and drizzle with canola oil. Seal foil around garlic head and roast at 350 degrees until tender, about 30 minutes.
Pop roasted garlic out of cloves and place into food processor along with all the other vegetables. Process until pureed and season to taste.
To serve, pour 1 tbsp. vodka into a shot glass and carefully top with gazpacho. Garnish with chives and feta cheese.
