Vegetables are delicious, there are so many kinds and you can cook them in such a variety of ways, also eat them green, that you can have just vegetables all the time.
I get the feeling that you misunderstand the definition and concept of being a vegetarian.
You have 3 choices:
1. Continue eating meat and no vegetables
2. Give up eating meat and begin to eat vegetables (become a vegetarian), or
3. Give up eating both meat and vegetables and die.
Is there a particular way that you don’t like vegetables? Like boiled and sitting on your plate? Or do you dislike bean burritos with sauteed vegetables as well? And corn chowder? And Gardenburgers? And portabello mushroom "burgers". And veggie pizzas?
Vegetarians don’t jsut sit there with a chunk of Tofu, some boiled Broccoli, and slimy spinach.
Last night I had Rigatoni pasta with a Mushroom sauce. I added Italian seasonings, garlic, and veggie crumbles.
The night before I had a pizza with gorgonzola, brie, arugula, spinach, and caramelized onions.
The night before I had Gnocchi with tomato sauce, garlic, and whole milk mozzarella shredded on top.
Before that, I had a chile & cheese tamale with a side of refried beans, rice, and a bean burrito. (All veggie – no lard, bacon, chicken stock, etc).
Tonight I will probably have fried rice with water chestnuts, fake chicken, bamboo, baby corn, and soy sauce seasoning.
Avoiding meat isn’t about just eating vegetables. It’s about eating good meals that don’t have meat.
you are not going to be able to maintain a healthy diet as a vegetarian if you "don’t eat vegetables" – you are going to have to get over the "picky eater" of it all if you really want to make this change.
Ah yes I was in this predicament before I made the switch. But now I have developed a taste for great vegetable dishes. It’s totally possible to be vegetarian and never touch a vegetable but you will undoubtedly find a dish that suits your tastes. One fairly easy recipe I made last night is a Quinoa salad. Quinoa can be found in most supermarkets in the packaged rice/dry beans section
Toasted Quinoa Salad:
Ingredients:
3/4 cup uncooked quinoa
1-1/2 cups vegetable broth or water
1 carrot, peeled and diced
1 red bell pepper (capsicum), diced
1/4 cup minced parsley or cilantro (cilantro works best, in my opinion)
2 sliced green onions (scallions)
Juice of 1 small lemon
Juice of 1 small lime
2 Tbsp. soy sauce, tamari, or Bragg’s Liquid Aminos
2 cloves garlic, minced finely
2 tsp. Asian garlic chili sauce or hot sauce of choice
Preparation:
Rinse Quinoa and drain. Put in a pot and toast over medium heat until a few grains begin to pop. Add broth or water and bring to a boil. Turn down heat, cover and simmer for about 15 minutes or until liquid is absorbed. Remove from heat and let quinoa cool, covered, for 10-15 minutes.
Mix carrot, red bell pepper, cilantro or parsley, and green onion in a large bowl. Add cooled quinoa and toss to combine. Whisk together lemon and lime juices, soy sauce, garlic and hot sauce. Pour over salad and mix well.
Chill until serving.
You can add some fresh raw vegetables to this like peas, green beans, corn, etc. I added some sugar snap peas.
trust me. There is some sort of vegtable that you will like.
and if you have tried them ALL and havent found not one, just go with pasta– oh wait! I forgot, that has TOMATOE sause. Sorry!
You can stick to the fake meat products, beans and legumes, nuts and nut butters, fruit, tofu, pasta, cheese, breads and cereals.
It’s not the healthiest, but it can be done.

first of all i would like to say that we dont eat for our tastebuds and thats the reason why most of us are vegetarian
i never ate meat in my whole life but i have people say its soo good but i say i dont eat for my taste buds
i dont have any recipes but i am only saying that you should eat vegetables because they are for our body’s survival
