Does anyone have any tasty Vegetarian recipes or know of any good Vegetarian recipe sites to recommend?

I am trying to become a Vegetarian and are running out of recipes to try. Does anyone out there have any tasty recipes that they would not mind sharing or know of any good and plentiful vegetarian recipe sites?

    I would suggest that you buy a book called "the accidental vegetarian" by Simon Rimmer, it’s fantastic even carnivores love the dishes I have made from it.

    I used this as an answer on another question, but I feel that it would do you some justice, also!

    There is so much protein in fake meat! Recipes, no. Ideas, yes.
    I buy morning star, boca, tofurky, yves! if you please, and quorn meats. they’re 100% vegetarian, sometimes vegan. They make everything ranging from lasagna, chili, chicken, hot dogs, beef, steak strips, chicken strips, to chicken breasts. Cheap meal ideas – Vegetarian bean and rice tortilla wraps, egg noodles with chunky salsa over them, Vegetable lasagna [my favourite thing!], Cheese pizzas w/ light cheese and light or white sauce, home made spinach and artichoke pizza (all though it takes a little bit to prepare and may run costly, it’s SO easy and so worth it!)

    This is for a large Spinach and Artichoke pizza –

    2 blocks of mozzarella cheese (can be any brand you want, try to get the non-moist kind because that tends to get watery or oily)
    2 small or one large can of artichoke hearts OR 1 large jar of artichoke salad
    2-3 cans of crescent rolls (it has a really sweet taste. if you prefer actual pizza dough, you can do two bags/cans/sheets of pizza dough.)
    1 cup of olive oil.
    1-2 large cloves of garlic.
    1 or 2 cans of spinach.

    Preheat the oven to 350. Take a cookie sheet (large-ish) and you can either spray it with pam, or use some olive oil to grease it. Then open the crescent rolls/pizza dough and spread it all out onto the pan, making sure there are no gaps in the dough or holes. Take a basting brush and lightly spread oil on the dough. Stick it in the stove for 3 to eight minutes, just long enough for it to get golden, but not fully cook. Once you remove the dough from the oven, pop the holes in the dough and then once again, oil your dough LIGHTLY. mince your garlic (if you’re feeling lazy, you can buy it pre-minced but trust me it’s better with freshly minced garlic, because the garlic infuses into the oil.) Anyways, mince your garlic and spread it all over the dough. Then, open your two blocks of mozzarella cheese and shred or chop them to medium thin/lightly thick pieces. Spread all the cheese and then take and drop your artichoke pieces and spinach all over the pizza how you would like! Bake for 16-25 minutes and let cool. Enjoy!

    Enjoy the wholesome goodness of my world famous Carrot Spaghetti:

    Ingredients:

    3 medium wholesome carrots
    2 small cloves garlic
    1/4 of an onion, diced (optional)
    3 tablespoon olive oil
    1/4 teaspoon salt
    freshly ground pepper
    1/4 cup of your favorite pasta sauce

    Directions:

    Wash the wholesome carrots well, especially if they are not organic. With a vegetable peeler, peel the wholesome carrots into long thing strips and sprinkle with salt. Finely dice the garlic and onion (if desired).

    Coat the bottom of a large pan with the olive oil and heat on medium-high heat. When hot, add the wholesome carrots. Toss frequently (this works well with tongs). When the wholesome carrots start to soften, add the garlic and pepper (add onion here too if you like). Keep tossing for a couple of minutes until some of the wholesome carrots get brown around the edges (don’t burn!) and the garlic is golden.

    Serve with your favorite pasta sauce.
