Does anybody have any good vegetarian recipes that are simple?

I recently quit eating meat. I became a Lacto-Ovo Vegetarian, the kind that still eats eggs and dairy products. I really need some good recipes that I could try. Help me out!

    I too am lacto-ovo who recently converted to vegetarianism. I am loving it! Here are a couple of the best and easiest recipes I have found so far…

    Spinach and Feta Pasta (super simple)

    1 pkg penne pasta
    olive oil
    1/2 c chopped onion
    2 cloves garlic
    3 c chopped tomato
    1 c mushroom
    2 c fresh spinach
    salt and pepper to taste
    1 pinch of red pepper flakes
    1 4 oz pkg of feta cheese

    Cook pasta until al dente. Meanwhile, heat 1 tbsp olive oil in a large skillet over med high heat. Add onion and garlic. Cook 5 minutes. Mix in tomato, mushroom and spinach. Season with salt, pepper, and red pepper. Cook 2 more minutes until spinach is wilted. Reduce heat to medium and stir in feta and pasta. Cook a couple more minutes til heated through.

    This one is of my own creation:
    Sweet Potato and Black Bean Enchiladas

    10 corn tortillas
    1 14 oz can black beans
    1 14 oz can sweet potatoes
    1 yellow onion
    2 seeded and diced jalepenos
    2 cloves minced garlic
    1 tsp each cumin, chile powder, coriander and black pepper
    1 shredded carrot
    1 can salsa verde or mild enchilada sauce
    1 1/2 c jack cheese

    Mash sweet potatoes in a large bowl with a fork or potato masher. Add 1/2 c jack cheese, spices, jalepenos, carrot, and beans. Saute onion and garlic for 5 minutes then add to sweet potato mixture. Stir all ingredients. Put a little sauce in the bottom of a 9×13" dish. Nuke the corn tortillas for 10 seconds each in microwave so they don’t break. Roll up a little of the sweet potato mixture in each tortilla and place seam side down in dish. Pour remaining sauce and cheese over the top and bake in a preheated 375 degree oven for 30 minutes. YUM!

    i love a veg bake
    layered with potato then cheese sauce
    broccoli then sauce
    mushroom again sauce
    then some potato again on top
    kind of like a lasagna with veg
    and just top it with cheese and bake

    very simple to wrap asparagus minced garlic and olive oil in foil and roast in oven

    My simplest recipe, both vegetarian and non-vegetarian, is to use a half can of coconut milk as a simmering sauce base, to which I add desired flavorings and food items.

    For example, todays lunch was tempeh cubes and sliced carrots simmered in saffron-curry-habanero coconut milk, and served over a bed of romaine lettuce tossed with the juice of one lime.

    Grilled cheese & tomato
    Pasta with favorite sauce
    Stir-fry veggies with teriyaki sauce
    Balsamic marinated grilled veggies on crusty bread
    Veggie Omelet

    My favorite vegetarian cookbook is called, Moosewood Restaurant’s "Simple Suppers". Great easy recipes. Fish is included as well.
