Thank you to everyone who has given me ideas instead of telling me to make my roommate change the way she is so I can be the way I want, that was very considerate. There are a lot of great ideas here.

First of all: tell your room mate to get over it.

But anyway, when I fry up vegetarian mince, I use a little red wine and some MSG to get that meaty taste. Then I use it in my veggie lasagna. Most people who taste it for the first time ask me if I have stopped being a vegetarian.

Kasha Chili

Ingredients:

1 (28 oz.)can stewed tomatoes
3 cups vegetable broth
1 (14-1/2 oz.) can pinto beans
1 tbsp. chili powder
1 tsp. paprika
1 tsp. crushed or minced garlic
1 tsp. cumin
1/2 tsp. ground oregano
1/2 tsp. celery salt
1/4 tsp. pepper
3/4 cup Wolff's Whole Kasha (uncooked)

In large skillet: add tomatoes, broth and spices. Bring to a light boil for 10 minutes. Add kasha and pinto beans, cover and reduce to a simmer. Simmer for 10 to 15 minutes or until kasha is tender. Serve hot.
This one is a good jumping off point for a meatless chili. the cooked kasha almost feels like ground beef, the flavors are great. I personally add celery instead of celery salt, and I also add green peppers and onions.

Did you ever ask your friend WHY she is anti vegetarian??
Some folks think vegetarian food is weird and odd and they don't realize that things like the classic tomato soup and grilled cheese sandwich meal is vegetarian, so is mac and cheese.
If she likes stuffed peppers, you can also use cooked kasha and cooked rice, mixed together with onions, garlic, salt and pepper for a delicious stuffed pepper or cabbage roll filling and it also feels like ground beef is in there.

Fried mac and cheese.

Make Maca and cheese and chill it in a bog metal tray. Then scoop out balls of it, like a huge scoop of ice cream. In the mac and cheese, put some jalapeno peppers to spice it up.
Dredge the balls while still cold, through seasoned flour- flour, red chili, salt, pepper, garlic, onion, green chili. Deep fry til you have ball of wonder golden brown. Put on a plate and drop some quite melted queso cheese around it, then another cirlce of green tomatillo salsa around the queso. Believe me, this will get you brownie points.

Wild mushroom and spianch huge ravioli. Make your own ravilioli with pre brough dough. It's easy and you can buy a heart shaped cookie cutter and make heart ravioli. Use pumpkin anf d goat cheese filling, or goat cheese and walnut filling, or all three. Any kind of filling works, if it's soft and creamy tasting.
USe a spoonful in the middle of the pasta shape, drip some water and egg around the edge them place another heart shape over the stuffing filled piece, make sure to press out all the air ( otherwise when you cook them in water, they pop open and explode making it not so pretty) and don't overfill. If they're BUG ravioli, you can make four for each person.
SImmer gently in a pan of deep water, make a simple tomato sauce. She will be jealous.

Rice and chickpea curry. Most people love curry. Get a good brand of sauce and buy a can of chickpeas. Heat the chickpeas in the sauce and make rice. Easy.

Tofu kebabs. Get some extra firm tofu, and pat dry. Make seasoned panko ( it is a type of breading flour, you can buy at the store, or just make a seasoned four yourself), with chinese herbs and spices. Dredge bug cubes of tofu through the panko and deep fry til they get very crispy. Drain in a paper towel and deep fry again. This second fry makes them really crispy.
Drain again. And use skewers with a soysauce peanut dip- use 2 TB peanut butter - smooth or chunky doesn't matter- and 3 TB of soysauce, and a pinch of red chili. Mix all togehter and use as a dip.

Serve any food with a salad- but make it interesting.
Dark spinach leaves freshly shelled walnuts ( makes a difference, toast them first so when you eat the salad they are warm, avocado slices, corn, black beans and some nice dressing.
She'll come round.

Anything pasta is good and can be made with no meat...
it kind of seems like your roommate is a jerk. I can understand not being a vegetarian, but "very anti-vegetarin"? Jeez!

Screw your roommates, tell them to make their own food if you they don't like yours.

My favorite no meat meal is a cilantro lime rice and black bean burrito with cheese, sour cream, salsa and guacamole. :)

Melanzane all Parmigiana is really good. It's an italian dish with Mozarella, Aubergine and Tomato sauce. Also maybe some Burrata cheese. Or maybe a salad with mozarella tomato and basil, although that is quite simple. Soup is also a very good option. Things such as tomato, pumpkin or butternut squash. Maybe curry? Such as chickpea or lentil curry with some rice. A dish of pasta? Maybe pasta with tomato sauce. Tomato risotto, saffron risotto. Pizza? There are so many dishes!

No offense but I would suggest: A) cook what YOU like, and, B) find a new roommate.

I've been vegetarian for 40 years and have many times lived with non-vegetarians; but only with ones that respected my right to be who and what I am (just as I respected theirs). Besides, unless she is only a child, let her cook her own food if she doesn't appreciate your efforts!

YES!!!! I am vegan (started vegetarian) and have lost weight and feel so good!
Meat is very fatty. Vegetables have no fat in them at ALL! You will live longer, I saw a documentary on it (Forks over Knives).
If you are a meat lover, try imitation meat. It really is good! Gardein, Morning Star, and Boca are my favorite brands. If you like tofu then you really don't need imitation meat, but if you don't like tofu imitation meats are just fine. Any grocery stores will have them aren't they aren't that expensive. Become vegetarian it is awesome! If you really like it and are comitted try being vegan it also makes you feel good and helps you lose more weight (try vegetarian first though)!
Just remember to eat foods with protein in them.

Not necessarily.

Some people gain weight when they go veggie because they eat more starches (bread, rice, potatoes, etc....) to comensate for what they have just taken out of their diet.

Losing weight is all about balance and self control.
