Help! I’m a 22 yr old single mother of an (almost) 4 yr old son and I am also a vegetarian! After years of eating the same things over and over I am looking for new quick and easy (and healthy and cheap) recipes! Any ideas?

Go to http://www.vegweb.com and look through the recipes. They have enough there to keep you and your family happy for quite a while.

Roasted red pepper soup – So Good!
Broil 3 large red bell peppers (1 1/2 pounds total), turning as needed until completely charred, 10-12 min.
Cool: remove stems, seeds and skin and coarsely chop.
Peel and coarsely chop 3 medium youkon gold
Cook 1 large chopped onion in olive oil until lightly browned. Add potatoes, peppers, and 4 cups vegetable or chicken broth.
Bring to a boil: then simmer, covered, until potatoes are tender when pierced, 10-15 min.
Puree’ soup in a blender in batches.
Reheat in pan, thinning with more broth if you like.
Season with salt.
Serves 4-6
Crusty french bread is good with it, too.
